This is an adaptation from Raman Prasad’s SCD muffin recipe (Recipes for the Specific Carbohydrate DietTM). My version is not SCD compliant because it includes sucanat® and brown rice flour which helps with the texture of the muffins and cake. This version also includes EVCO which adds a naturally sweet taste in
baking. This batter is an amazingly versatile mixture which molds and cooks well in muffins, cakes, or torte pans/molds. This recipe makes one layer of a cake. The cake is so good alone, but a splash of fresh berries completes it—no frosting needed!
